Vinification and fining The grapes are hand-picked and submitted to stemmer-crushing follows maceration on the skins for 12 hours, followed by a pressure stage at max 0,8 bar. The grape must is cold-decanted with a fermentation carried out at a temperature of 15°C for 12 days in inox steel tank
